1. Long Grain Rice |

3. Minced Peeled Fresh Ginger |

4. Minced Garlic Cloves |

5. Bay Scallops |
4 Ounces |

6. Coarsely Chopped Pineapple |

7. Fresh Lemon Juice |
1 Tablespoon |

8. Salt |
1/4 Teaspoon |

9. Tsp Pepper |
1/4 to 1/2 |

10. Minced Fresh Cilantro |
1/2 Tablespoon |

| Directions |
|
| |
- Boil a medium pot of salted water.
- Stir in the rice and boil for 10 minutes (until done).
- Drain the rice and set aside to cool.
- Heat oil in a large nonstick skillet over med-high heat.
- Add the ginger and garlic; stir-fry until lightly browned (about 2 minutes).
- Add the scallops and stir-fry until scallops are done (about 3 minutes).
- Add rice, pineapple, juice, salt and pepper; stir-fry until thoroughly heated.
- Sprinkle with cilantro and serve.
